I Am Craving Extra Protein …and pancakes
Protein Power Pancakes (gluten-free)
178 calories, 8g fat, 12g carbohydrate, 15g protein
Ingredients:
- 3 egg whites from whole, large eggs or 1/2 cup liquid egg whites
- 1/4 cup ground flax seeds
- 1/4 – 1/2 cup vanilla unsweetened almond milk
- 1 tsp vanilla powder
- 1/2 tsp baking powder
- 1/2 cup blueberries
- 1/4 tsp. cardamon (to activate blueberry antioxidants ten times and give unique flavor)
- 1/4 tsp salt (optional)
- 1 Tbls of your favorite fat for frying (butter, ghee, coconut oil, canola) (for lower fat/less calories, the above were made just spraying pan with coconut oil spray)
- (if you just had a really hard workout and need extra protein, add – 1/2 to 1 serving of your favorite protein powder– then, use 1/2 cup almond milk)
Directions:
- Pour wet ingredients into the dry ingredients. Add blueberries in pan on top of poured pancakes (esp. if using frozen blueberries – so batter doesn’t turn purple )
- Fry, flip, Enjoy!
- Frying pan fix - put some parchment paper on pan and nothing will stick!
